Varieties of Bourbon, Caturra, and Typica are processed using the honey process method, preserving natural sugars from the fruit and enhancing body and sweetness. Scoring 87 points, this coffee reflects both quality and cultural resilience at origin. In the cup, it opens with aromatic warmth—notes of molasses and butter lead into a creamy, honeyed texture. Roasted by Cafeología in Chiapas, “Cocktail de Caracoles” gathers together the peaberry (“caracolillo”) selections separated during green coffee processing—an assemblage of unique bean formations from the communities of Aldama, Tenejapa, and Cerro Brujo.
Comprised of Typica, Bourbon, Caturra, Garnica, and Marsellesa varieties, this master blend combines washed and natural processes into a singular, expressive profile. In aroma, expect ripe fruit—blueberry, honey, and molasses—lifted by a delicate floral undertone. On the palate, citrus brightness unfolds into juicy mature fruit sweetness with a silky body. The finish carries a lingering grapefruit-like acidity that feels refreshing rather than sharp. This is a dynamic and layered coffee: fruit-forward yet structured, playful yet precise.
